A Message From Honest Dumplings Co-Founder, Ray

Today we are officially announcing that we are dropping our price after 8 years in business. During this time when costs from nearly everyone are increasing, we are excited to pass on a lower price to our customers.

When we started Honest Dumplings in 2014, I folded every single dumpling by hand in my home kitchen. 8 years later, we are making what i used to make in a week in an hour in a HACCP manufacturing facility we built in 2018. (I used to think I am faster than our small dumpling folding machine but data proves I was wrong.) I remember sitting in the empty building with my business partners Chris and Allen in 2017 dreaming about what our facility could be. Then came the difficulties, challenges, sleepless nights, heated discussions, the list goes on. Chris often said that if we knew how hard it was to build a food company, we would never have started this.

But every time we reflect on everything we have been through together, we wouldn't want to have done anything different. Every time I walk into our current facility, every time I watch our team making dumplings, it still feels unreal that we built this. It feels like I am walking into our dream.

And we know we are not there yet. World dumpling domination, the reinvention of grocery store frozen aisles, the fight with food conglomerates. We are still far from our ultimate goals.

But we have reached an important milestone today that we are all very proud of. By building and growing Uproot Food Collective and working with other like-minded food companies, we are able to have better margin for our products: the prices for our packaging and ingredients are lower, the efficiency of our productions has improved, the cost of distribution has come down. With our increased economy of scale, we can now afford to drop our price.

We hope our lower price means more people can enjoy our dumpling more often. Our increased capacity also means we can make a lot more new flavours more often.

So please spread the word and share out story. We look forward to continue growing and scaling up. We can't wait to bring the best dumplings to everyone's dinner table!

What Inspired Little Bear Gelato?

Franck longed to make gelato and sorbet during his time in France - where he was born - as a pastry chef. Made with 60-70% fruit, nuts, and other amazing flavours, his small batch gelato and sorbet are smooth and rich, with a tremendous clarity of flavour and very little air, all handmade and hand packed. Our customers have been raving about these seriously addictive gelato and sorbet. If you haven't tried them, what are you waiting for?!

 

What Makes Little Bear Gelato Unique

Franck's Gelato brings authentic European flavours to Canada using the same recipe he used in France. His gelato is creamy and flavourful, low in fat and sugar and made with quality milk and cream. And his vegan sorbet has as much fruit as possible inside with no preservative or food colouring. The first ingredient is fruit. It's like eating a frozen fruit.

The most popular are Belgian Chocolate Gelato, Sour Cherry Gelato and Mango Passion fruit Sorbet. Franck's favourite is his Black Forest Gelato! (And did you know we have the FULL lineup of Little Bear Gelato?!)

We are very excited to launch our first Uproot Founder Spotlight. We are featuring one of our founders, South Island Pie's, Jamie Scott! South Island Pie and Honest Dumplings merged their businesses in 2018 and started the journey to building Uproot. Together in one space, we can make more food people love and reach a broader audience!

Q: If you could tell yourself one thing before you started your business now, what would it be?

A: It's crazy to think about, we're in our 9th year of business. It's definitely something to be proud of! Before I started South Island Pie, I thought to myself, "if I don't start this company, I'm going to retire a grumpy old man." This feeling still rings true to this day. I'd tell myself to do it. It's going to be a lot of hard work and sleepless nights but you'll regret it if you don't do it.

It seems like a big deal to pull the trigger and get going, but it's really not. You can make your products out of your home kitchen every day after work and Sundays, you'll blow your oven up 3 times in the first year, sell at the farmers market on Saturdays, all while working a full-time job. You do this for a few years to see if it's a viable option. If you decide it is, that's when shit gets real!

Q: What's the most popular pie? What's your favourite?

A: The top pie on any given day is the Wilkie, Arvo or the Chook. The vegetarian Greek pie is also very popular. We created a few veg options as we know more and more people are choosing to eat more plant based food. We wanted to provide an option for them.

My go to is the Wilkie. It is one of the classic pies back home: steak & cheese. Our version is full of tender chunky beef and flavourful aged cheddar cheese. For future flavours, I am really excited about our new smoker attachment for our oven. I'm looking forward to trying smoking or braising some beef and getting that into a pie!

Q: What is your dream with South Island Pie? What's your future plans?

A: I started South Island Pie to give myself a taste of home. The kind of comfort food that brings memories of home. I have since met so many customers, Kiwi or not, who fell in love with my pies as much as I do. My dream has turned into wanting every Canadian to have tried our pies and to know our pies are sooooo much better than a pot pie! I also dream of exporting SIP pies all over the world including NZ! Future plans also include a full sausage roll lineup as well as a fruit pie lineup!

Q: Any unforgettable moments since you started your own business?

A: I remember doing a Saturday market inside City Hall in the middle of winter, it was very cold out, too cold for the old pie van. The damn thing wouldn't start. So I had to push the freezer down 104th ave to a mates place on 104 ST in the snow and -30 degrees out. That's one day I'll never forget!!!

Q: Can you share the most touching heartfelt message you got from a pie lover?

A: I've got so many to share but this is the first one I got and has meant the most to me. It's also from the fella that did the voice over for the SIP video!


"When I was home last, I had a pie every single day. Most days, I had two. I was home for six weeks - that's a lot of pies. But, I never once got sick of them. My love for a Kiwi pie only grew. Now, I hate Canada for not giving me the pies that I need. And then you came along. Jamie, I've never met, and it's hard for a Kiwi bloke to say this to another Kiwi bloke, but ... I think I love you. And your pies (not that I've tasted one, but I just know I will).So, how do I get my hands on these pies? I can not wait until the August 17 2013 market. I'm from New Zealand. I need a pie. Help me, please."

What Inspired Thai Manna?

It all started in Thailand. Michelle Chick, founder of Thai Manna, was blown away by the food. From roadside food stalls to bustling night markets, every dish she tasted came alive with spices and aroma. She came back to Calgary with a passion for Thai cuisine. She came up with the idea of making little makeshift dinner kits for her friends for Christmas. The feedback and gratitude were immeasurable.

What Inspired Confetti Sweets

Kathy has a sweet tooth and she loved baking, but after having her kids, she needed something more to keep her busy so she started selling at her local farmers’ market. As part of Uproot's visions and values, we work with our team members who are inspired to make their own products and bring their ideas to market. Brett is the first entrepreneur to make that happen!

We all fell in love with his unique borscht after tasting it. Brett has been making Doukhobor Borscht since 2015. It has expanded his ideas of how to make simple ingredients into something unique and flavourful. We have many repeat customers who come in craving Brett's soup!

Honest Food Inspired By True Entrepreneurs

Brett's Uproot Story

Living with the owner of Natural Kitchen Delights (Orrey Metz), I saw his company started from the ground up. Countless hours in the kitchen making chocolates only to spend your weekends at farmers markets, he was creating a life of his own. I, on the other hand, just worked to pay my bills and hobbies. Witnessing his drive inspired me to do more and try something out of my comfort zone.

I was later introduced to Chris and Ray (founders of Honest Dumplings) and Jamie (South Island Pies). Shortly after that their companies merged and Uproot Food Collective was created. A job opening with Uproot was available last summer and I snatched it up as quick as I could.

Being part of this opportunity I was inspired to start selling a product of my own. With the help and direction of everyone involved I was able to start up my own company: Baba's Borscht. Making borscht has always been a joy in my life but I never expected to have it available in a store front for everyone to enjoy."

What Makes Baba's Borscht Unique?
Baba's Borscht is a unique soup that really stands out. Unlike other borscht that are heavily beet based or contain meat, Doukhobor borscht is vegetarian and served warm. A combination of potatoes, cabbage, carrots, tomatoes, onion and a single beet make this borscht much heartier and healthier than others. Only one beet is used per batch and even it is discarded in the final process of making the soup!
What Inspired
Baba's Borscht?
Growing up, borscht was a large part of Brett's life and something only available when he would visit his Baba in Castlegar, BC. Taking home jars of borscht for later meals was such a treat and always made you feel good, full and healthy. Future plans are to improve packaging, make larger portions available for sale and have Baba's Borscht available nationwide!

How is Baba's Borscht Made?

Although the ingredients are very simple, making Baba's Borscht is rather complex. First step is to make the stock with potatoes, carrot and one beet with lots of water and a little cream. After the potatoes are soft, they are removed and mashed with butter and cream.

Then sautéed onions, tomatoes, cabbage are added to the soup with more potatoes and cabbage. At home this dish takes all four burners to create! The mixture cooks together until the last two key ingredients are added: green pepper and dill.

What's Next

Brett's next products in the works are Lapsha and other soups (possibly a carnivore option). Lapsha is as much a staple to Doukhobor cuisine as is borscht! Made up of flour and egg, this simple nutritious noodle makes for a quick meal that is easily storable and shelf stable. "For a bedtime snack, Baba would make us lapsha with butter and Vege salt. Very simple, delicious and heartwarming."
