Inspiration came in early 1980, to bring a quality European style ice cream to Alberta made with the best local Canadian ingredients when possible. There were no small local ice cream producers then in Edmonton. He started the company in August 1981, in West Edmonton. What he thought was missing was a mix of the best qualities in North American ice cream, and Italian gelato. Low overrun, and natural quality and a flavorful product. Pinocchio products were supplied to local restaurants, grocers, cafes , and special events. The company is now run my Son Tom Ursino, who shares the same inspiration in using local, natural ingredients.
